The West Austin area of Clarksville was originally a freedman’s colony for slaves freed after the Civil War. It now has a very diverse population, and this diversity is reflected in the various nationalities of the residents. There is an excellent public grade school in Clarksville, named Mathews Elementary.

Every fall, Mathews holds a carnival on the grounds, which includes the Clarksville Annual International Dinner and the Octoborama Festival, which is held at the end of October. During Octoberama, local musicians, many of whom are the parents or relatives of Mathews School students, perform at the carnival. Also, most of the kids bring large quantities of food to be sold at the International Dinner, to reflect the cuisine of the countries of their origin.

Since most of the University of Texas Division of Housing apartment complexes are located in the West Austin area, and the grade school children residing there with their parents attend Mathews, many ethnicities and heritages are represented at the dinner, including Chinese, Korean, Japanese, Mexican, and various African and other nationalities. While at the Octoberama Festival, you can hear local musicians, sample all kinds of homemade food, watch contests such as two-legged races and relay races, and enjoy juggling and face-painting, which all of the kids love.

Right down the street from the school is another Austin legend, Nau’s pharmacy, which has one of the oldest soda fountains in Austin. You can have eggs for breakfast or a shake after school at Nau’s, and then head down to the 9th Street dog park.

There are many good restaurants in the Clarksville area, and this area is a short bus ride or long walk to Lady Bird Lake, and the jogging trails, or you can go downtown by bus or on the sidewalk, just a mile or so in the other direction. There are also a number of historic homes in the area, including a home referred to by the children as “the Castle”, since it looks just like a medieval castle, but which was originally a military college building.

There is also a “Moonlight Tower”, another local landmark, in the area of the Castle. Austin and Clarksville are home to many local politicians and well-known Austinites. Ann Richards was a regular at the drug store soda fountain, and most Hollywood celebrities visit the restaurants when in Austin.

The Johnson Creek Hike and Bike Trail skirts the western edge of Clarksville, and winds along under the Loop One freeway, also called the MoPac for the Missouri Pacific rail line which runs directly alongside the freeway. You can walk, ride a bike, or jog up and down the hike and bike trail, which crosses Johnson Creek in one place and begins at Austin High School, on the northern shore of Lady Bird Lake.

From the Austin High School access point to the trails, You can cross the lake, which is actually the Colorado River, and hike through Zilker Park or swim in Barton Springs, or go north, and once past Clarksville, you eventually wind up in the Brykerwoods area, if you go south you can head down to the Barton Hills and Travis Heights.

Clarksville is also home to various arts and crafts establishments, and the yearly Eeyore’s Birthday Party Celebration, another fun local event, which is held in Pease Park, on the north-eastern perimeter of the Clarksville area. All in all, The Clarksviile area of Austin is truly a great place to live, whether you’re raising a family, a student, retired, or any one of the varied lifestyles which flourish in Austin. You will always feel at home in Clarksville.

It should be quite gooey and sticky. Roll out into floured board until about 4-5 mm thick. Cut into shapes or squares, I used a dog bone shaped cutter. Place on a baking tray lined with baking paper or a silicone mat. Bake 200 degrees Celsius for 10-15 minutes. Remove from oven n turn over then return to oven for another 5 minutes. Until quite firm and dry then cool and dry out on a wire rack. Store in an airtight container. As you can see they are delicious.

These are crucial factors in determining if a home-based business is right for you and if so, what type of business you choose. Make a list of your talents and a list of your current skills then combine the two to assist in generating some ideas.

o The Two Basic Types: Once you have some ideas, you then have to decide whether you want to provide products and/or services. Businesses providing products either produce them themselves or purchase them from a third party distributor/manufacturer i.e. jewelry, cosmetics, cookware, health products etc…for resale. Service based businesses provide a special service both from home and/or at the client’s location i.e. freelance writer, accountant, dog walker, financial advisor, publicist, virtual assistant etc…Which one will you choose? Don’t rush into anything. Make this decision thoughtfully.

o Distinguish Between Business Options: Franchise, Business Opportunity or Start-Up from scratch? First, you can invest in a franchise. As a “Franchisee” you would pay the “Franchisor” or Company for the right to sell it’s proprietary products and/or services. Initial investments and royalty fees can be high, sometimes in excess of $25,000 and corporate restrictions are limiting. Still, you do get the benefit of training, support and typically a known commodity.

Second, you can “buy into” a business opportunity. These are increasinging number of web- based opportunities. These business programs come with clear instructions and strategies for getting started and achieving success, after all, if you do well…then so does the umbrella company. Moreover, they require much smaller initial investments than a franchise, sometimes as low as $100. However, you need to be judicious about these kinds of opportunities before you sign on.

Third, you can start a brand new business from scratch but, like making homemade brownies instead of the break n’ bake, it can be messier, riskier and more costly. Starting something brand new means you won’t have any corporate restrictions or royalty fees but that also means you are on your own…no support, training, guidance and the financial burden rests with you and you alone. Still, starting a business all your own means you are in total control, responsible for all decisions and potentially all the rewards, financial and otherwise, if it succeeds.

o Make a Business Plan: A good business plan is essential for success. Set objectives and how you will achieve them. Include: a summary of the company objectives; market analysis; sales & marketing plan; projected expenses, revenue for the first 2 years; and your sources of financing. Keep it short and sweet. Remember this plan will serve as your guide later on as you walk the happy road to success. o Get The facts: Be careful! Take the time to study all aspects of whichever business model you choose. That means thoroughly researching every angle of either; the target market for your product and/or service. At the beginning of the new century, O’Charley’s added the Ninety Nine Restaurant & Pub and Stoney River Legendary Steaks chains to its family.

A real favorite O’Charley’s is their Philly Burger – A burger topped with shaved roast beef, fried onions, Swiss cheese, lettuce, tomato and Cajun horseradish sauce. Served with Au Jus.

Other family favorites are their delicious, hearty soups served with their signature yeast rolls.

–O’Charley’s Chicken Harvest Soup–

1/4 pound butter

3/4 cup flour

2 1/2 to 3 quarts water

2 tablespoons chicken base

2 quarts chicken stock (see chicken tenders recipe)

1 pound fresh carrots, diced

6 to 7 ribs celery, diced

1 medium onion, diced

3/4 teaspoon white pepper

3/4 teaspoon garlic powder

Cooked chicken tenders (recipe follows)

10 ounces egg noodles

In a large pot, melt butter. Add flour and cook 3 to 4 minutes. Slowly add the 2 1/2 to 3 quarts of water, stirring constantly. (The amount of water used depends on how thick you want the soup.)

Simmer 20 minutes.

Add chicken base and chicken stock.

While chicken stock mixture is cooking, bring 2 quarts of water to a boil in a separate pot.

Add carrots, celery and onion. Cook 6 minutes. Drain. Add to chicken stock mixture along with white pepper and garlic powder.

Simmer 10 minutes. Add diced cooked chicken tenders.

Cook noodles in a separate pan of boiling water for 3 to 4 minutes. Drain and rinse with cold water. Add to soup. (Noodles will continue cooking in the soup.) Simmer soup 2 or 3 minutes more and serve.

Makes 8 to 10 servings.

Chicken Tenders for Harvest Soup

2 quarts water

2 tablespoons chicken base

1 small onion, cut into quarters

1/2 rib celery, cut into 2-inch segments

2 1/2 pounds chicken tenders, thawed

In a large pot, bring water, chicken base, onion and celery to simmer.

Add chicken.

Gently simmer until done, about 5 to 6 minutes. Do not overcook. Drain chicken and reserve stock. (This can be used for the stock in the preceding recipe.)

Place chicken in the freezer to stop the cooking process. When cool, use a sharp knife to dice into 1/2-inch cubes. Add to soup.

Makes enough for 8 to 10 servings of soup

3 lbs. red potatoes

1/4 cup butter, melted

1/4 cup flour

2 quarts half-and-half

1 pound block Velveeta cheese, melted

White pepper, to taste

Garlic powder, to taste

1 tsp. hot pepper sauce

1/2 lb. bacon, fried crisply

1 cup cheddar cheese, shredded

1/2 cup fresh chives, chopped

1/2 cup fresh parsley, chopped

Dice unpeeled red potatoes into 1/2-inch cubes. Place in a large Dutch oven, cover with water and bring to a boil.

Let boil for 10 minutes or until almost cooked.

In a separate large Dutch oven, combine melted margarine and flour, mixing until smooth.

Place over low heat and gradually add half-and-half, stirring constantly. Continue to stir until smooth and liquid begins to thicken.

Add melted Velveeta. Stir well. Drain potatoes and add to cream mixture.

Stir in pepper, garlic powder and hot pepper sauce.

Cover and cook over low heat for 30 minutes, stirring occasionally. Place soup into individual serving bowls and top with crumbled bacon, shredded cheese, chives and parsley.

–O’Charley’s Yeast Rolls–

1/2 C crisco oil

1/2 cup boiling water

1 teaspoon salt

1/3 cup sugar

1 pkg dry yeast

1 lg egg

3 cups all-purpose flour

Mix the Crisco oil, boiling water, salt, and sugar.

In a separate bowl, mix lukewarm water and yeast. Dissolve yeast and then pour into the oil mixture.

Add 1 large egg and mix. Add 3 cups of all purpose flour and form into a ball. Lightly flour this ball and put it into a bowl. Let the flour-ball rise for 2 hours.

Shake the bowl so the ball drops down in size. Pinch off 3 pieces for each roll. Roll these into little balls. Place the 3 balls in a well-greased muffin pan. (Each cup has 3 balls of flour) Let rise 2 hours. Bake at 400 for 10-15 minutes.

–O’Charley’s Caramel Pie

1 graham cracker crust

1 can Eagle Brand condensed milk

1 large tub Cool Whip

1 C mini chocolate chips (optional)

1 C chopped nuts (optional)

Pour 1 can sweetened condensed milk into top of double boiler; place over boiling water.

Over low heat, simmer 1 to 1 1/2 hours until thick and caramel colored. Beat until smooth.

Pour caramel from double boiler into pie crust and layer Cool Whip on top.

Place in refrigerator.

When ready to slice, sprinkle nuts and mini chips on top for decoration.

Dig in and enjoy!

–Texas Roadhouse Prime Rib–

1 whole uncut ribeye (about 12 oz. per person) marinade

2 tsp ground black pepper

2 tsp sugar

1/2 cup kosher salt

1/4 cup chopped garlic

1/4 cup liquid smoke

1/4 cup soy sauce

Two days before cooking, mix all ingredients for marinade.

Place in refrigerator overnight.

Place the prime rib on a rack in a large pan.

Cover one side with 1/2 the marinade mixture, rub it all over that side.

Turn prime rib over and pour the remainder of marinade on, and rub it in.

Cover the pan and refrigerate overnight.

To cook, preheat oven to 450 degrees. Bake at that temp for about 30 minutes to sear the outside of meat. Turn oven down to 250 degrees, continue cooking for approximately 2 hours until a meat thermometer registers 120 degrees (medium rare.

Increase the reading by 10 more degrees for each state of “doneness” (medium rare, medium, medium well, or well-done) Let the meat sit for about an hour before slicing. Serve with au jus.

–Texas Roadhouse Chili–

3 pounds boneless beef chuck roast, cut into 1-inch cubes

2 tablespoons olive oil

3 cloves garlic, minced

3 tablespoons chili powder

2 teaspoons ground cumin

3 tablespoons all purpose flour

1 tablespoon dried oregano

2 (14 oz.) cans beef broth, divided

1 teaspoon salt

1/4 teaspoon ground black pepper

In a large skillet, heat up the olive oil over medium high heat. Add in the beef cubes and sauté them for 2 minutes. Reduce the heat to medium and stir in the garlic.

Meanwhile, in a small bowl, combine the chili powder, cumin and the flour. Sprinkle the spices over the meat and stir until all of the beef is evenly coated with spices. Crumble the oregano over the meat and pour in 1 1/2 cans of the beef broth.

Add in the salt and the black pepper. Stir the chili mixture thoroughly and bring to a boil. Reduce the heat to low, cover partially, and let chili simmer for 90 minutes.

Pour in remaining beef broth and simmer for another 30 minutes, until meat is fork tender and falls apart easily.

Remove from heat and let cool. Cover and refrigerate to allow the flavors to blend.

–Texas Roadhouse Sweet Yeast Rolls–

1/2 solid cake of yeast or 1 pkg of active dry yeast

1/2 cup warm water

2 cups milk

1/2 cup sugar

2 quarts all purpose flour

2 TBS melted butter

2 whole eggs

2 tsp salt

Soften yeast in warm water with a teaspoon of sugar. Scald milk; cool to lukewarm. Add yeast, sugar and enough flour to make medium batter. Beat thoroughly. Let stand until light and foamy.

Add melted butter (which has been cooled), eggs, and salt. Beat well.

Add enough flour to form soft dough. Sprinkle small amount of flour on counter and let dough rest.

Meanwhile, clean and dry bowl; grease clean surface of bowl. Knead dough until smooth and satiny. Put in greased bowl; turn over to grease top. Cover, let rise in warm place until double in bulk. Punch down. Turn out on floured board.

Divide into portions for shaping; let rest 10 minutes. Shape dough into desired forms. Place on greased baking sheets. Let rise until doubled.

Bake at 375 degrees for 10 minutes; reduce temperature to 350 degrees for 10 to 15 minutes more. Cool on rack.

–Texas Roadhouse Cinnamon Butter–

1/2 cup Butter

1/2 cup Powdered Sugar

1/2 cup Honey

1 tsp Cinnamon

Blend all ingredients at room temp.

–Texas Roadhouse Sweet Potatoes with Honey Caramel Sauce–

Sweet potatoes

Bake sweet potatoes in oven at 450° for 35 to 45 minutes, until tender.

Remove at once and prick with a fork to let steam out – be careful, steam will be very hot.

Cut a 1 1/2-inch cross in the center of each potato.

Using oven mitts open the potato by pushing the ends toward the center until filling starts to push through the cut.

Place ½ the marshmallows into the sweet potato.

Pour 2 oz of your favorite store brand caramel sauce over the marshmallows; or make your own sauce using the recipe below. Place the rest of the marshmallows over the caramel sauce.

Put potato bake on an oven safe pan and put back in the oven on Broil. Let cook for just a minute or two, keeping careful watch.

Remove from oven when marshmallows start to brown.

Serve as soon as possible.

Honey Caramel Sauce

· 4 tablespoons butter

· 1/4 cup light brown sugar

· 1/4 cup honey

In a saucepan add butter and whisk in brown sugar: do not boil. Add honey and continue stirring for approximately 4 to

It’s Friday night and you are preparing for a weekend where your buddies will be coming over to watch the big game on your satellite tv.  If you want to throw a party that will be fun and memorable, then you should make sure to keep in mind the following steps which will help you ensure that your party is one for the ages.

First of all you need to make sure that you have the appropriate food.  You should ideally have multiple kinds of beer, chips and other snacks.  Burgers or hot dogs are always a good choice for a main dish, and you should also make sure that you have a variety of dips on hand.  Sour cream, salsa and spicy dips are all good dips to have and share with your friends.  It is also a good idea to have a few sweets at your party.  Homemade cookies or brownies always make a good postgame meal.

Halftime is the best time to cook your meat; after all, that’s why sports have halftime, right?  While charcoal grills undoubtedly have a better flavor than gas grills, it is important to keep in mind that if you don’t want to miss any of the action that a gas grill might be the way to go.  Otherwise you and your friends could play rock, scissors, paper with the loser stuck lighting and maintaining the grill hot.  If you want to get fancy you can also include a couple of skewers on the grill.  Mixing it up with kabobs that have meat, peppers and pineapple is an easy way to pull off a memorable party hit.

If you have NFL Sunday Ticket, then you know that you will have your pick of games and can concoct a delicious doubleheader.  While it is always a good idea to watch your home team, if your team is losing you can forget about that fact as you search for another more exciting game.  This is also an advantage for fans who are participating in one or more fantasy leagues, you might want to check out what your team’s players are doing in other less popular games to see how your fantasy team is stacking up against the competition.

Decorations and food are ultimately but ways to facilitate a good time, and that is what watching football is all about.  The workweek is a hard time for everyone, and we all go through our periods of stress, so being able to relax and watch some football in HD will help revive you and prepare you for the next week.  Men have been gathering for generations in order to enjoy each other’s company, and it would appear that football is the modern man’s way of gathering and relaxing on a Sunday, and if you are lucky a Monday night as well.

5 Great Romantic Dates

Did you go to a reunion, wedding, or a party lately, see an old flame, and realize how much you missed the person?  Or did you ever lose touch with someone special after a move or a breakup and now you’re getting back together?  Did something come along and sideline a relationship once and you just never got back to it for whatever reason?

Or, perhaps, you have met someone exciting and new and you want a memorable date as a first date to make the beginning of what you hope will be many more happy ones.

The point is, if you’re smitten, and you want something to do that is unique, here are some great dates to mark the occasion:

What is the Number One Most Romantic Date? That would be:A catered or picnic lunch by a waterfall. How do you go about setting this up?  Get a map and see if your area has a waterfall within an hour’s drive from where you live. (It stops being romantic if you have to drive too far.)  Contact several caterers and ask if they cater lunch by a waterfall.  If no one does, just buy a prepared picnic basket from a deli—or make your own.  Be sure and find out what kinds of food your date likes.  Prepare some of them if you feel like it.  Buy anything else you need.  If you don’t have a waterfall, scout for a reasonably fun place for a picnic.  I vote for the sound of water.  Maybe you’re in a boat or sitting outside the courthouse with a water feature, or sitting on a park bench in the rain, under a big umbrella, sipping a cup of hot soup, hot coffee, and a homemade cookie!

Number Two Romantic Date– Boat Rides:

Whether you are riding the Staten Island Ferry at night, admiring the Manhattan skyline, or paddling on a small pond in a rowboat, something about boat rides stirs a person’s thoughts.  If you ask good questions, you might get a flow of conversation going.  Boat rides can be quiet, provoking memories or a rush of emotions to share with someone.  Again, you have the mesmerizing water that leads to a serene adventure.  Take a bag lunch and a bottle of wine if you plan to spend enough time on the water.  Warning: be careful if you are planning a cruise.  Some of us get seasick.  My husband gave me an anniversary cruise once, and five miles out of Miami, I was so green, I wanted to jump off the ship and swim back to shore.

Number Three Romantic Date– Singin’ In The Rain:

Did you ever see that movie?  Just makes me want to break out my old tap shoes and dance on the sidewalks and the streets.  You could do that of course— or, you could share a big umbrella, walk the streets together, sing songs you know, and look for a coffee shop where you can enjoy a cup of brew and dry off.  This date depends on how creative and spontaneous your partner is.

Number Four Romantic Date– Take a Class Together:

How creative can you get?  There are all types of yoga classes offered in different cities—all are recommended for health and longevity.  Classes in Spanish, Italian, French, or German speak loudly to the idea of taking a trip together once you get through the class and want to go somewhere to practice what you’ve learned.  Trips, restaurants that cook the food of the country you are studying, and concerts with their cultural music will make the dates even more fun while you expand your cultural bandwidth.

Number Five Romantic Date– Volunteer Together:

When the economy is tight, these are the days when every minute and dollar is short.  Yet, no matter how hard times get, someone else has it harder.  This is where you and your date – or steady – can find time to contribute to others and find out more about each other.  This is where you can see what kind of person you’re dating.  And if your date has not been a volunteer before, this is a huge bonus in learning to serve others.  Even if your relationship doesn’t last, your influence of helping those in need will.  If you don’t know where to begin, here are some ideas:

  • Local animal shelters need assistance walking the dogs, among other tasks
  • Programs for children such as Head Start or after school care need people to read to children.
  • Nursing homes appreciate volunteers who will visit and talk to the people in their care.

If you have other skills that people would appreciate, such as drawing, singing, or playing a musical instrument, be generous— share what you can do. These dates are great ways to build memories and discover unknown qualities about each other.

Those who owned and raised other pets before, such as dogs or cats, know that a house can have several dangerous spots. Even if one might think some dangers faced by puppies or kittens won’t apply to birds, they too come with their own safety perils. Birds which spend some of their time outside their bird cage would tend to fly around rooms. Unlike other animals, birds can fly into windows or mirrors, self-inflicting injuries and causing damage. Of course, birds can fly through open windows and feel no need for a proper good-bye, never to be seen again! A bird should only be let out of its cage under constant supervision.

One should always expect the unexpected and act accordingly when opening a bird cage and allow its tenant to roam around the house. Some home appliances should be switched off during this period of time. The obvious equipment includes ceiling fans, grills, heaters and any other hot surface, electric cords, electric beaters and all sorts of cutting utensils. Of course, if a bird is to remain in its cage, most of these risks do not apply. However birds require and thrive on attention and socialisation with their owners, especially birds like parrots, so when they are let out of their bird cage, owners should bird-proof their homes.

Birds are very sensitive to toxins! Dangerous airborne contaminants coming from cleaners, pesticides and industrial fumes can be fatal to birds. Even strong, aromatic odours can often kill birds! Nail polish, aerosol body sprays, paint fumes and cigarette smoke should be avoided. Even certain food is highly toxic and dangerous for birds. Chocolate, coffee and cocoa contain theobromine, which is very dangerous to birds as to most other pets. Avocado is also toxic and should not be given to any bird. Birds cannot digest salt the way us humans can and food with a high-salt nutrient value can be harmful to them, as can be other high-fat or high-sugar snacks. Although it sounds obvious, one should also state that alcoholic beverages should not be given to birds under any circumstances, as their liver cannot metabolize the alcohol. As most birds also chew on everything small enough to get their beaks on, one should place safe bird toys made of sanitised toxin-free plastics or safe-woods such as manzanita and eucalyptus.

Cages can also pose safety risks to their tenants. Today’s modern cages, especially the larger cages such as a parrot cage, are made of wrought iron and electrostatically powder coated for a long lasting a durable finish. A bird’s home should avoid having lead and zinc components present in most ‘chicken wire’ homemade cages as they cause bird poisoning when chewed upon. These materials should also be avoided in any bird toys and perches placed inside cages.

Finally, birds are not known for their social interaction with other pets, especially cats. Therefore, having cats around can be of a risk to birds even when they are confined within the bird cage boundary. Cats commonly carry Pasteurella bacteria, which is ubiquitous in them and does them no harm. However this is deadly to birds, so even if your cat just bats your bird or gets saliva on it, one should take the bird to nearest vet as soon as possible. Precaution is always better than cure! However one should keep an avian vet’s number always close by just in case.
